Description

Ruby Black Tea, an extraordinary tea born in Taiwan.

Created in Taiwan by cross-breeding a native wild Taiwan tea with Assam cultivar from Myanmar (Burma).  Taiwan Tea Research and Extension Station (TRES) developed this new tea cultivar, known as number 18.  While development took many years, number 18 is a relatively young cultivar.  TRES started to propose number 18 to Taiwan tea farmers around 1999.  Because of its unique profile and high-quality its popularity rises in Taiwan and abroad.

Health&Tea Ruby Black Tea grows using natural farming methods.  The tea farm is certified organic.  The fresh tea leaves are processed into a striped-shaped leaf. The tea master uses a natural fermentation method with tea leaves about 80% fermented.  As a result, the tea end-up with a reddish-brown color, ample body, and enchanting aromas.  The tea powerful taste includes tropical fruit, cinnamon flavor with a hint of mint.

Steep it for 2 or 3 minutes using just below boiling temperature water.  While the tea brews enjoy the wonderful aromas released by the leaves.  This tea can easily be re-brewed 2 or 3 times.

HOW TO PREPARE

HOT BREW

Tea Amount Water Temperature Steeping Time
 ≈ 2 to 3 tsp 8 FL OZ 205°F 2 to 3 minutes

You can re-brew the same leaves 2 or 3 times. If you re-brew, then increase brewing time.

 

COLD BREW

Put loose-leaf tea in a pitcher with cold water and infuse in refrigerator overnight for at least eight hours.

    Nice tea. I brewed this tea in my 8oz. capacity cast-iron teapot (glazed on inside with independent screen filter insert). I used perhaps 2 heaping teaspoons of tea with 8oz. of almost boiling water. The dry tea leaves from the package were all full, not broken into pieces. Whoever processes this tea takes a lot of care with every step of the process. I used the first infusion to wake up the tea and discarded after about 5 seconds. The fragrance off of the inside of the lid of the teapot was absolutely enchanting. There were notes of cinnamon and maybe raisins, but also other fragrances I cannot describe. For the first infusion I allowed the tea to brew for about one minute. The brewed tea was delightful. The second and third infusions were equally delicious. I extended the brewing time slightly for each subsequent infusion. This is a nice morning tea for a chilly day like today.
